We have to leave our TT out in the weather this winter. Although we usually have mild winter's in eastern NC , we do have a few freezing days. What are your suggestions for covers? Does the entire TT need to be covered or just the AC?

There's no real need to cover it at all - whether you do is up to you. Covering the whole thing can help to keep it clean. I've no idea what benefit covering just the AC might provide. If you do cover it, use a cover made for RVs - a cheap plastic tarp won't breath and can trap moisture.
