Default Best gears for towing over mountains

Here's a question for those experienced...

This is our first long haul trip in our 6400 - Dallas to Moab. We have a 24' enclosed trailer behind. Any recommendations on gears to be in for inclines up or down through the mountains of NM and CO? We've beefed up the engine with some work on the injectors and we certainly have more power but curious for input from those experienced with this particular machine. Any advice would be helpful! Thanks y'all!!
