Adding fresh water

I have the 2004 Ultra Supreme. When boondocking is there a easy way to add fresh water to tank?

Depends on what you consider "easy". We have a 25 gallon food grade water barrel that we strap in a cage on top of our toad. Has an inlet for filling and an outlet hose. We gravity feed to our tank. We found it easier than using a siphon.

Amazing thing; Once I saw someone use a water bed mattress on top of their SUV to fill their tanks.

depends on where your water tank is. Ours is under the master bed, and as we virtually never camp in a campground, we modified the top of the tank with a cap to make filling while boondocking easier.

This involved gluing a piece of reinforcing plastic on top in the section we were going to drill, then using a hole saw to cut through the top of the tank. We then use a food safe pressure fitting plug to make the tank watertight against overfill when filling from the house.

To fill on site, you prop up the bed, pull the plug, and you can use a funnel and a bucket to fill.

It's still not ideal, but our fill hose was so long and convoluted that we could NOT fill without pressure from the designed fill spot.

I have a 2004 A Class Gulfstream Sunvoyager, which is not setup for gravity feed.
I got a water transfer pump from Harbour Freight for about $38, I have 2 x 6 gallon portable fresh water containers which I fill with water any place I can find fresh water (state parks, national parks, Ste.) once I get back I then hook up the Water transfer pumps 12 volt battery leads to the house batteries, then hookup all the usual refill hoses drop in the water transfer pump pickup hose into portable water containers and turn on the water pump.

I ran into the same issue when filling the tank, and have a similar solution. I sourced a 26 gal rv tank and sureflow pump, mounted it on a plywood skid and put it in the basement empty. When we dry camp, I'll fill it up (sometimes with a 5g tank and funnel/hose) then pump the water into the main tank using a short water hose. This will bypass the pressure valve in the motorhome and fill the tank up. It takes up some room, but 26 gallons really helps out when we are not close to water.
