Engine access

I have a 2007 Gulfstream Tourmaster 42A. The critters have chewed holes I'm my radiator hoses while it is parked. I don't know how to access the engine to make repairs. There is a buildup step area in the bedroom but I don't know if this is the access that I need. It seems that it's a lot of work to remove it to get to the engine. Any help and suggestions will be appreciated.

The radiator hoses are accessible from the undercarriage. Not from the top. Replace is not a big deal. 1 hour work.
