Default Engine access

I have a 2007 Gulfstream Tourmaster 42A. The critters have chewed holes I'm my radiator hoses while it is parked. I don't know how to access the engine to make repairs. There is a buildup step area in the bedroom but I don't know if this is the access that I need. It seems that it's a lot of work to remove it to get to the engine. Any help and suggestions will be appreciated.
