Red,

RV water pumps are usually set up to pump up to a preset pressure and then shut off. If you are using water at a slow enough rate at a shower or faucet then the pump will run in short intervals and shut off for a brief time before starting up again. If your pump is cycling like that when no water is being used -- look for a pressure leak somewhere...

Sounds like vaporlock. Sometimes when the pump runs dry it pulls in air and stops pumping. If you can disconnect the discharge and suck water through the pump it should start pumping again.

Red,
The diagram of your water pump could be the issue.
Hear me out?
With the water pump switch in the on position, and all the water valves are off. And not leaking! Ill use a few squares of toilet paper to check foe leaks throughout the water system. All faucets hot and cold. Don’t forget the shower head, and valve, the hot water tank has e few fittings that might be troublesome as well, go outside your coach open the hot water door, make sure you have fresh water in your tank, and again water pump switch is on.
Your hot water tank has two fittings that could be seeping a little, one is the over pressure valve , the other is the anode that screws into your tank. It actually keeps the corrosion from attacking your aluminum tank.
Again very important to check for little dribbling of water at all fittings.
Your fresh water pumps diaphragm could be weak and bleeding off pressure causing the pump to pump water back up to the set pressure for your system.
Hopefully this information will help you find the issue!
