Replacing wall boards/Paneling in 2007 Crescendo 8386

Has anyone replaced or upgraded the walls in your Gulfstream? If so do you have any pics, suggestions, or ideas. My galley side had previous water damage from the other owners. I discovered it after I bought it unfortunately. Its just soft in a couple spots at the top. I planned on changing the interior anyway so wasn't real concerned. Just wondered the best way to go about it. Also, some of the wallpaper type strips that go between each of the panels is peeling.
Any help would be welcomed!!
